As their name states, Yellow Finn potatoes are yellow-fleshed with a dense and creamy texture. These small round potatoes are silky and buttery in flavor.
Yield: 6 to 8 servings
3 | pounds | Yellow Finn potatoes*, unpeeled, scrubbed and halved | |

12 | cloves | garlic, smashed | |
|
|||
1/8 | cup | olive oil | |
|
|||
2 | Tablespoons | fresh rosemary, minced | |
|
|||
1 | teaspoon | freshly ground black pepper | |
|
|||
1/2 | teaspoon | salt | |
|
Preheat oven to 400 degrees F
In a large bowl or gallon size ziplock bag, combine the potatoes, garlic, olive oil, rosemary, pepper and salt. Toss well to coat.
Place in a large roasting pan or the bottom of a broiler pan and roast in the oven for 40 minutes, or until golden brown, stirring twice.
Spoon onto a platter and serve.
*Recipe variation:
Try Yukon Gold, fingerling or red potatoes in place of Yellow Finn for excellent results!
